
Ingredients:
• 4 large eggs
• 4 large flour tortillas
• ½ pound breakfast sausage
• ½ cup shredded cheese (cheddar, Monterey Jack, or your favorite)
• ¼ cup milk (optional, for fluffier eggs)
• 1 tablespoon butter or oil
• ½ teaspoon salt
• ¼ teaspoon black pepper
• Optional add-ins: diced bell peppers, onions, salsa, hot sauce
Instructions:
1. Cook the Sausage:
• In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked.
• Remove from the pan and drain excess grease if needed.
2. Scramble the Eggs:
• In a bowl, whisk the eggs, milk (if using), salt, and pepper.
• In the same skillet, melt butter or heat oil over medium heat.
• Pour in the eggs and cook, stirring gently, until soft and fully set.
3. Assemble the Burritos:
• Lay out the tortillas on a flat surface.
• Evenly divide the scrambled eggs, sausage, and shredded cheese among the tortillas.
• Add any optional ingredients like diced veggies or salsa.
4. Wrap the Burritos:
• Fold in the sides of the tortilla, then roll tightly from the bottom up to form a burrito.
5. Toast (Optional):
• For a crispy burrito, heat a dry skillet over medium heat and toast each burrito for 1-2 minutes per side until golden brown.
6. Serve & Enjoy:
• Serve immediately with salsa, sour cream, or hot sauce on the side.
Make-Ahead & Freezing:
• Wrap each burrito in foil or plastic wrap and store in the refrigerator for up to 3 days.
• For longer storage, freeze burritos in a freezer-safe bag for up to 2 months. Reheat in the microwave or oven before eating.
